
Christmas Cookies
..of Christmas because raisins and cinnamon remind me a bit of this time of year. When that sweet, aromatic, and delicate scent wafts from the oven, I immerse myself in the most magical time of the year! Few ingredients for rustic, tasty cookies that are also suitable for those following a completely plant-based diet!
Ingredients
- Ground cinnamonTo taste
- All-purpose flour
200g200g - Coconut flour
30g30g - Plant-based milk
100mL100mL - Sunflower oil
50mL50mL - Raisins
50g50g - Sugar
80g80g
Preparation
- STEP 1 OF 3
In a bowl, combine sugar, oil, and cinnamon. Mix and pour in the milk. Mix again and incorporate the all-purpose flour and coconut flour.
- STEP 2 OF 3
Knead and finally incorporate the raisins. If you don't like them, replace them with chocolate chips. Try to create a homogeneous dough and finally form the cookies by taking a bit and creating small balls.
- STEP 3 OF 3
Place each ball on a baking tray lined with parchment paper and flatten them slightly with your fingers. Bake at 180°C for about 25 minutes.
