The Cà dei Frati Tre Filer wine is a sweet wine produced by the Cà dei Frati winery, located in the Lombardy region of Italy. This winery is famous for producing high-quality wines, thanks to the privileged position of its vineyards, situated on the shores of Lake Garda. Tre Filer is a passito wine, made from Turbiana, Chardonnay, and Sauvignon grapes. These grapes are grown in vineyards that enjoy a unique microclimate, thanks to the proximity of the lake, which mitigates temperatures and allows excellent grape ripening. The production process of Tre Filer begins with the manual harvesting of the grapes towards the end of September. The grapes are then dried on racks for about 5-6 months to concentrate the sugars and aromas. After drying, the grapes are pressed, and the obtained must is fermented in barriques, where the wine remains for about 8-10 months. This is followed by a bottle aging period of at least 6 months before commercialization. The result is a sweet wine with an intense aroma of ripe fruit, honey, and vanilla. On the palate, it is rich and enveloping, with good acidity that balances the sweetness and provides freshness and drinkability. It pairs perfectly with fruit-based desserts and blue cheeses. Pairings: The Cà dei Frati Tre Filer wine is a sweet wine, so it pairs perfectly with a variety of desserts. A classic pairing could be with a fruit-based dessert, such as an apple tart or a pear cake. The sweetness of the fruit and the crunchiness of the shortcrust pastry marry well with the sweetness of the wine. Another pairing could be with a chocolate dessert, such as a fondant or a chocolate cake. Chocolate, with its intensity and sweetness, can balance the sweetness of the wine, creating a perfect equilibrium. Finally, Cà dei Frati Tre Filer can also be paired with blue cheeses, such as gorgonzola or roquefort. These cheeses, with their strong and decisive flavor, can contrast the sweetness of the wine, creating an interesting and surprising pairing.
