This wine is born from the magic of the island of Salina, in the Aeolian archipelago, where the sun, the sea, and the volcanic soil create a unique microclimate. The vineyard is located in the area of Porri – Capo Faro, a promontory that hosts an ancient lighthouse, and is cultivated on volcanic basalt soil, rich in minerals. The Nerello Mascalese, an indigenous grape variety of Sicily, is grown using the Guyot system, on a small and selected plot – number 523 – which yields grapes of extraordinary quality. The particular combination of exposure, altitude, and soil ensures wines of great complexity and elegance, making this limited production (only 3,500 bottles per year) a true enological gem. The harvest takes place in the last week of September, when the grapes reach full phenolic ripeness. This is followed by prolonged maceration on the skins, aimed at enhancing the structure, intensity of pigments, and aromatic depth. The wine is then aged for a year in oak barrels, a process that softens tannins and acidity, giving it a complex and balanced refinement. Pairings: The "Guardiano del Faro Salina" is a versatile wine, perfect for accompanying the hearty dishes of Mediterranean tradition: Aged cheeses, such as pecorino and caciocavallo. Elaborate sauces, such as meat ragù or pasta with mushrooms and spices. Grilled meats, with intense and smoky flavors. Recommended serving temperature: 16°–18°C.
