The distillation of the pomace is achieved through the traditional alembic method. The aging takes place inside the barrel, also known as a "barrique," a small wooden cask with a capacity of 225 liters.

The term "barricade" actually comes from these barrels, as during the French Revolution they were filled with earth or debris and placed along borders or roads to create barriers.
