Preparation

Wash a Citrus orange under running water, dry it with a cloth, then finely grate the zest and squeeze it along with the other three.
- STEP 2 OF 5
Also squeeze two Citrus lemons, strain the juice and add it to the orange juice with 150 ml of water, the orange zest, and mix well.
- STEP 3 OF 5
Put the couscous in a bowl and drizzle it with the prepared juice, mix well, cover with plastic wrap, and let it rest in a cool place for two hours.
- STEP 4 OF 5
Finely chop the spring onion, dice the peeled cucumber and cherry tomatoes, removing the water and seeds. Finely chop the parsley and mint.
- STEP 5 OF 5
After the two hours of resting in a cool place, fluff the couscous with a fork, add the chopped vegetables and herbs, season with oil, salt, pepper, and serve.
