Aioli sauce is a traditional sauce from Mediterranean cuisine, originating from Provence. It is a garlic-based sauce with raw egg yolk, olive oil, lemon, and salt. Aioli is the perfect accompaniment for fish dishes, French fries, or grilled vegetables. It is simple to prepare and only takes a few minutes.
Peel and finely crush four cloves of garlic in a mortar, incorporate a raw egg yolk, a pinch of salt, and 25 cl of oil (drip it in drop by drop at first, and once the sauce starts to bind, pour it in a thin stream as you would for mayonnaise)
Quickly rotate the pestle and thoroughly mix the ingredients together
While the sauce is thickening, gradually add the juice of one lemon and 1/2 tablespoon of cold water
When the sauce is ready, transfer it to a sauceboat
If the sauce separates during preparation, beat an egg yolk in a bowl and slowly incorporate the failed aioli, letting it drip in drop by drop
A blender can be used to help make this sauce
