Place the slices of bread on a baking sheet and toast them in the oven at 200°C for about 5 minutes, or on the grill, until golden brown.
In a bowl, mix the Goat Cheese Mousse with the Blue Goat Cheese until you obtain a smooth and soft cream (you can use a fork or, for an extra velvety result, a mixer).
Carefully wash the peaches and cut them into thin wedges, keeping the skin if it is thin and intact.
Spread each slice of bread with the goat cheese cream. Place 2-3 peach wedges on each crostino.
Drizzle each crostino with a thin stream of Linden honey. Finish with a few fresh thyme leaves and, if desired, a grind of black pepper.
Consume immediately to enjoy crispness and freshness. Assemble at the time of serving.
