The pomace is processed locally and blended following an ancient recipe by Serafino Levi. After a minimum aging of 3 years in Piedmontese ash barrels of about 700 liters, the master distiller and the inspector certify that the grappa has been aged in wood for the aforementioned period before bottling. The alcohol content is 45°.
