The organic peeled fava beans Perle della Tuscia are grown using traditional and organic methods, respecting nature by small local farmers. Starting from whole fava beans, they are peeled through a mechanical process, which involves the removal of the outer skin (husk) and then split. During this process, no essential nutrients of the legume are removed. The organic peeled fava beans cook quickly in about 25-30 minutes without pre-soaking and are more digestible than whole ones, making them suitable for the diets of children and the elderly. Rich in minerals, fiber, protein, manganese, and potassium, I recommend using them to make side dishes, creams, and velvety soups. A small historical curiosity: in ancient Greece, they were used in political voting. White ones indicated positive consent, while black ones indicated negative.
