
The softness of these cookies is truly unique! I often use ricotta in my desserts because I love the texture it gives to the batter and the taste, so I decided to make cookies with it too. I combined the ricotta with a little raisin and a lovely orange zest and created these delicious little treats! They take less than 10 minutes to make and are so soft they’ll disappear in no time! If you don’t like raisins, replace them with chocolate chips, nuts, or simply leave them out!

In a bowl, pour the flour, potato starch, sugar, baking powder, a pinch of salt, and the orange zest.
Add the soft butter cut into cubes and start working with your fingertips until you get crumbs.
Add the eggs and ricotta and, using a spoon, form a fairly sticky mixture. Do not add any more flour.
Add the raisins or chocolate chips and mix.
On a tray lined with baking paper, form small mounds spaced apart using a spoon.
Bake at 180 degrees for about 20 minutes.
