Delicious cookies that you can flavor as you like. I used ground ginger, but vanilla, cinnamon, etc. also work well. I decorated them with melted dark chocolate, but you can use colored sprinkles, sugar crystals or chopped hazelnuts, etc.
In the video you will see that I use the Bimby. I am still giving you the steps for kneading by hand. In a bowl, work the butter in pieces with the sugar and ginger until you obtain a sort of cream.
Add the egg and mix until absorbed. Add the flour and the cream. Knead until you obtain a smooth, homogeneous dough ball.
Wrap the dough ball in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Roll out the shortcrust pastry to a thickness of about 1 centimeter and cut out the cookies with the cutters. Place them on a baking tray lined with baking paper.
Bake in a preheated static oven at 180 degrees for 15 minutes. Let them cool.
Melt the dark chocolate (I have an electric melting pot, but it will be enough to melt it in a double boiler) and dip the cookies as you like. Let them cool on the baking paper and enjoy them for breakfast or as a snack.
They stay crisp for several days in a tightly sealed tin or glass container.
