Skewer the fruit onto wooden skewers.
Mix the sugar with the water in a small pan and bring to a boil without stirring.
Let the sugar syrup simmer for about 15 minutes and measure the temperature with a sugar thermometer.
As soon as the syrup reaches 150 °C, remove the pan from the heat.
Prepare a bowl with water and ice.
Carefully dip the fruit on the skewers into the hot syrup, turning it until completely coated.
Let it drip a little and dip the skewers into the ice water.
Remove, let it drip and cool slightly.

If not eaten right away, do not cool the skewers in ice water. Let the sugar drain well, dry, and cool completely on parchment paper. They keep fresh for about 12 hours.
