


Skewer the fruit on wooden sticks.
Mix the sugar with the water in a small saucepan and bring to a boil, without stirring.
Let the sugar syrup simmer for about 15 minutes and measure the temperature with a sugar thermometer.
As soon as the syrup reaches 150 °C, remove the pan from the heat.
Prepare a bowl with water and ice.
Gently dip the fruit on the skewers into the hot syrup, turning it until it is completely coated.
Let some drip off and dip the skewers into the ice water.
Remove, let drip and cool slightly.
Serve immediately.

If not eaten right away, do not cool the skewers in ice water. Let the sugar drip off well, dry and cool completely on parchment paper. They keep fresh for about 12 hours.
