Wash the zucchini, trim off both ends, cut them in half, then cut them lengthwise again to obtain 4 shells from each zucchini.
Scoop out the flesh and put it in a bowl, chopping it into small pieces.
Add the minced meat, salt, pepper to taste, Parmesan, and the egg.
Mix the ingredients and fill the zucchini shells.
Spray a little oil on the zucchini and cook it in the air fryer for about 20 minutes at 190°C.
Once cooked, add a little stracciatella on top of each boat, put them back in the air fryer for 2 minutes, and serve.
You can use whichever minced meat you prefer, chicken, turkey, beef, or even avoid using meat altogether, or replace it with tofu; they will still turn out delicious.
