
Apple crepes: a light dessert to make, without butter and without milk. Ideal when you have leftover apples and want something sweet without turning on the oven.
Peel the apples and cut them into pieces.
Cook the apples in a pan with a little water until soft.
Meanwhile, prepare the crepe batter: in a bowl combine the egg, water, oat flour, and a pinch of cinnamon; mix well, removing any lumps.
Lightly grease a crepe pan with a drizzle of oil and cook the crepes by pouring in a small amount of batter; cook them on both sides until golden.
Let the crepes cool slightly and make sure the apples are cooked.
Assemble the crepes by filling them with the cooked apples as shown in the photo.
Serve with a dusting of powdered sugar and cinnamon to taste.
