
"Fake" fruit tart: a soft, light pancake-like base, no oven and no added sugar. Easy and quick to prepare, perfect for breakfast, brunch or a snack. Top with ricotta or Greek yogurt and fresh seasonal fruit.
In a bowl combine the egg whites, Greek yogurt, oat flour, rice flour, coconut oil and baking powder. Mix with a hand whisk until smooth and homogeneous.
Heat a non-stick pan over low heat. Pour in the batter evenly and cook until the surface is no longer runny, then flip carefully and cook the other side. Let cool completely.
Spread a layer of ricotta or yogurt over the cooled base and top with fresh fruit to taste (strawberries, blueberries, kiwi, banana).
