Wash the zucchini flowers and cut them into pieces.
Cook the flowers in a pan with very little oil, capers, salt and mint until tender.
Loosen the ricotta with a tablespoon of water until you get a smooth cream.
Heat the bread (in the oven or toaster).
Spread the ricotta cream on the hot bread.
Finish with the cooked zucchini flowers and a sprinkle of oregano before serving.
