Mix the liquid ingredients: in a large bowl pour in the water and extra virgin olive oil and whisk with a whisk or fork until the mixture becomes slightly emulsified.
Add the dry ingredients: combine the oat flour, baking powder and erythritol. Mix until you get a smooth, homogeneous batter; it should not be too runny or too thick. If it is too compact, add one tablespoon of water at a time.
Slice the apple: wash, peel and thinly slice the apple; gently fold the slices into the batter, leaving some aside to decorate the surface.
Pour into the pan: line a small baking pan with baking paper or brush with a little oil, pour in the mixture and level with a spatula. Decorate with the remaining apple slices and a sprinkle of oats.
Cook in the air fryer: set the air fryer to 170°C for 20 minutes. After 20 minutes do the skewer test; if necessary extend cooking by 3-4 minutes.
Cool and enjoy: let it warm up for about 10 minutes before cutting. Serve as is or accompanied by Greek yogurt or nut butter.
