I believe this is one of the simplest and most delicious ways to use pandoro. A reduced version of pandoro filled with mascarpone cream... even quicker and more delicious!
Chop the pandoro. Pour the orange juice, add the zest, and give it an initial mix. Incorporate the mascarpone.
Mix well, using your hands if necessary, until you obtain a soft but workable mixture.
Create small balls and roll them in coconut flour. Place them in paper cups and leave them in the fridge for a few hours before serving.
A bowl
Store them in the fridge for two or three days at most!
For a lighter version, you can replace the mascarpone with ricotta or Greek yogurt.
