
Squares with Cheese Cream and Sour Cherry Compote
A soft dessert, with a base of fluffy chocolate cake and a delicious cheese cream on top, along with plenty of sour cherry compote!
Ingredients
- Eggs

230g230g - Sunflower oil
125mL125mL - Sparkling water
125mL125mL - Flour
325g325g - Unsweetened cocoa
25g25g - Vanilla baking powder
1packet1packet - Mascarpone or spreadable cheese
500grams500grams - Sugar
70g70g - Cornstarch
20g20g - Sour cherry compoteas needed
Preparation

Separate the yolks from the whites and beat the whites until stiff peaks form.
- STEP 2 OF 8
In a bowl, blend the yolks with the sugar. Add the oil, water, sifted flour, baking powder, and cocoa.

Finally, gently fold in the egg whites with a spatula.

Pour the mixture into a rectangular pizza pan lined with parchment paper.

Prepare the cheese cream by mixing all the ingredients and blending until you get a soft and smooth cream.

Spoon the cream over the chocolate mixture.

Spread the sour cherry compote over the surface of the cake and use a toothpick to create a marbled effect.

Bake in a preheated fan oven at 160 degrees for 30 minutes.

More information
If you don't have sour cherry compote, you can replace it with strawberries or raspberries. Great to serve as a dessert at the end of a meal.
