Preparation

Boil the vinegar until it has reduced by half

Chop shallots and garlic and place them in a jar with thyme sprigs, crumbled bay leaf, crushed pepper, and a pinch of salt

Pour the boiling vinegar over the aromatics, close the jar, and let it rest for a couple of hours
