
Red Wine Sauce

Ingredients
- Beef bones
500G - Pork rind
1 - Beef stew
250G - Aromatic herbs
100G - Onions
100G - Tomato paste
1Cucchiaio - Red wine
30Cl - Bay leafto taste
- Thymeto taste
- Whole peppercornsto taste
- Brown stock
150Cl - Flour
25G - Olive oil
50G - Saltto taste
Preparation
- STEP 1 OF 4
Roast the bones and stew, add the roughly chopped aromatic herbs, pork rind, and half of the onions, roasting everything together
- STEP 2 OF 4
Extinguish the cooking with half of the wine, add the tomato paste, sprinkle the flour, continue frying, pour in the stock, add the aromatic herbs, and cook for 2 hours

Blend the red wine and onion sauce, then season
- STEP 4 OF 4
Red wine and onion sauce: cook 15 cl of red wine with 50 g of finely chopped onions until it becomes a syrup-like consistency
