Tanghulu is a traditional Chinese dessert made with fresh fruit, here with strawberries and grapes, skewered and candied with sugar.
Skewer the fruit onto wooden skewers.
Mix the sugar with the water in a small pan and bring to a boil, without stirring.
Let the sugar syrup simmer for about 15 minutes and measure the temperature with a sugar thermometer.
As soon as the syrup reaches 150 °C, remove the pan from the heat.
Prepare a bowl with ice water.
Gently dip the fruit skewers into the hot syrup, rotating them until completely coated.
Let them drain a bit and dip the skewers into the ice water.
Remove, let drain and cool slightly.
Serve immediately.

If not consumed immediately, do not cool the skewers in ice water. Let the sugar drain well, dry, and cool completely on parchment paper. They stay fresh for about 12 hours.
Depending on the season, you can use other types of fruit like mandarins, blueberries, or raspberries.
