A highly impressive main course: whole artichokes baked until tender and golden, with a warm, melty heart of Pecorino delle Alture inside. The toasted sesame seed finish adds an aromatic touch and a crunchy note. A flavor explosion that enhances every ingredient.
Clean the artichokes by removing the tougher outer leaves and cutting the tips. Slightly hollow out the center with a small knife and place them in acidulated water with lemon juice to prevent browning.
Drain the artichokes, gently open the center, and insert a cube of Pecorino delle Alture into each.
Place the artichokes in a baking dish, stem side up. Drizzle with extra virgin olive oil, add salt and pepper, sprinkle with sesame seeds, and pour water at the bottom of the dish.
Cover the dish with aluminum foil and bake in a preheated static oven at 180°C for 25 minutes. Uncover, increase to 200°C, and continue baking for another 10 minutes until golden and caramelized at the bottom.
Serve the artichokes hot, cutting them in half to reveal the melty Pecorino heart. Perfect as a refined main course or special side dish.
