Toast the sliced almonds in a pan for 2-3 minutes until golden. Let cool.
In a mixer, blend the Goat Cheese with honey, cream, powdered sugar, and vanilla if desired until a soft cream is obtained.
Transfer the mousse to a serving plate, shaping it into a dome.
Cover the entire surface with the toasted almonds, pressing them lightly to adhere.
Refrigerate for at least 1 hour.
Serve the mousse sliced, accompanied by sweet crackers or dry biscuits.
