The almond varieties that Valdibella uses for production are Tuono, Genco, Supernova Ferragnes, Romana, Pizzuta, and Fascionello, all typical varieties of Sicily. The almond harvest takes place in August and September. After the harvest and after the smallatura, the almonds are dried for 3-4 days in the sun. Once dried, they are stored in bags and kept in cool and dry warehouses. The shell perfectly protects the almond and allows it to be preserved throughout the year.
