It is a very old product whose origins are not entirely clear, but traces of a sweet similar to the current one can already be found in medieval times. Today, the one produced by our company is presented as a round cake made of a shortcrust pastry shell, sprinkled with a layer of white icing sugar, inside which is a filling with a sweet flavor, a slightly spiced aftertaste, and a soft texture. The story of Don Camillo's Spongata. The town of Brescello is famous not only for the successful Guareschi saga (Don Camillo and Peppone), but also for a delicious sweet: Spongata cake, which our company wanted to name after this character, known and loved by everyone. What is it? It is a very rich baked sweet, with a shortcrust pastry shell containing a special brown filling made with almonds, candied orange cubes, sultana raisins, honey, butter, apricot jam, spices and flavors. The historical origin. Its origin is very ancient, as with many sweets produced in our beautiful Italy, more or less with the same ingredients. It seems to date back to the mid-15th century, although it only became typical of Emilian culinary tradition from the second half of the 19th century. Production began in 1863 with the family of Domenico Bacchi and continues today as it once did, still handmade.
