
This is the medium-aged version of this cheese from the Verona mountains, produced exclusively with raw cow's milk and with a semi-cooked paste. It is aged from 6 to 8 months. The rind is thin and elastic. The paste has a color ranging from white to straw yellow, especially in the summer period. More intense in aroma, with a lovely sensation of yellow flowers, fresh milk and a nice balance on the palate.
