Mix the sifted flours in a stand mixer, add the yeast dissolved in a little of the water taken from the total amount, then add the rest of the water in a stream.
When the dough starts to come together, add the salt a little at a time, let it incorporate well, then add the oil in a stream and work the dough until it becomes elastic.
Transfer to a container and let rise for about 2 hours, doing 3 rounds of folds in the bowl 20 minutes apart.
Take the dough back, divide it into pieces of about 160 g, shape into balls, and let rise again until doubled in size.
Then roll each ball into a disk, fill with the seasoned tomato sauce, and bake at 250° for about 8 minutes, then add the mozzarella and bake for another 5 minutes.
