
Folded Mini Pizzas

- Manitoba flour
600g600g - All-purpose flour
400g400g - Water
700g700g - Extra virgin olive oil
50g50g - Salt
25g25g - Dry yeast
7g7g - Filling
- Datterino tomato puree
300g300g - Pizza pulp @rodolfi_italia
400g400g - Mozzarella
500g500g - Saltas needed
- Oreganoas needed
- Extra virgin olive oilas needed
Preparation

Mix the sifted flours in the stand mixer, add the yeast dissolved in a little water taken from the total, then add the rest of the water gradually.
- STEP 2 OF 5
When the dough has thickened, add the salt little by little, incorporate well, then add the oil gradually and knead the dough until it is smooth and elastic.

Transfer to a container to rise for about 2 hours, making 3 rounds of folds in the bowl at 20-minute intervals.

Take the dough again, divide it into pieces of about 160 g, form balls and let them rise until doubled.

Then roll out each ball into a disc, fill with the seasoned tomato sauce and bake at 250°C for about 8 minutes, then add the mozzarella and bake for another 5 minutes.
