Light and gluten-free apple cake: a light, healthy, and delicious dessert, lactose-free and butter-free, made using rice flour, rice milk, and good extra virgin olive oil!
Carefully wash the apples, peel them, and cut them into chunks. Place the pieces in a bowl and sprinkle a little lemon juice to prevent oxidation.
In a large bowl, break the eggs and add the brown sugar. Use a whisk to beat everything until you get a light and frothy mixture.
Add the extra virgin olive oil and water to the egg and sugar mixture. Mix well to combine the ingredients.
Sift the rice flour and cream of tartar baking powder, then gradually add them to the mixture, continuing to stir. Add a pinch of salt.
Incorporate the apple chunks into the mixture, gently stirring with a spatula to distribute them evenly.
Line the baking pan with parchment paper and pour in the batter, leveling it with a spatula.
Preheat the oven to 180°C and bake the cake for 30-40 minutes. Check the cooking by inserting a toothpick in the center: if it comes out clean, the cake is ready.
