Preheat the oven to 180°C in static mode.
In a bowl, crack the eggs, add the sugar and whip with an electric mixer for a few minutes until you get a fluffy mixture.
Add the oil, plant-based milk and vanilla paste, then mix with the mixer.
Add the sifted gluten-free mix and baking powder, mixing with the mixer until you get a smooth, lump-free batter.
Grease the cake tin and dust it with gluten-free breadcrumbs.
Pour the batter into the cake tin, tapping it lightly to release the air bubbles.
Bake for about 25-30 minutes or until golden and dry in the center when tested with a skewer.
