Slice the red onions thinly.
In a pan, heat the extra virgin olive oil and add the onions.
Add balsamic vinegar, brown sugar, and a pinch of salt, then cook until caramelized.
Cut the puff pastry into circles the size of the molds.
Place the caramelized onions in the molds and cover with the puff pastry circles.
Bake in a preheated oven at 180°C for about 20 minutes.
Remove the tarte tatin from the oven and let them cool slightly.
Turn the tarte tatin upside down onto a serving plate.
Garnish with stracciatella and serve.
