Soft mini focaccias are tasty rustic snacks, perfect to accompany an aperitif with friends, to serve instead of bread, or as a snack for little ones. They are super soft and have the irresistible scent of rosemary: a simple and tasty recipe!
Decide whether to knead by hand or with a mixer; pour the flour into a bowl or the stand mixer, add the yeast, and mix while gradually pouring in the water. Cover with plastic wrap and let rest for 30 minutes.
After the time is up, add the salt and knead until it becomes a smooth dough (at least 10-15 minutes).
The dough should be slightly sticky to the hands; let it rest for another 30 minutes, then do one fold.
Let it rest again, covered with plastic wrap, in the turned-off oven for at least one hour or until doubled in volume.
Then divide the dough into equal portions and place them inside muffin molds previously oiled or sprayed with non-stick spray.
Let the mini focaccias rise until doubled, always in a warm environment (it will take about 30 minutes). When they have puffed up, make grooves with your fingers on the surface of each muffin.
Season with coarse salt, and rosemary if you like it.
Steam-bake for 20 minutes in an oven heated to 220°C. (Put a bowl with boiling water in the oven, full of water, to create steam)
Remove from the oven and let cool outside the pan for at least 10 minutes.
Your mini focaccias are ready!
Mini focaccias keep for up to two days stored in an airtight container or under a glass dome at room temperature. The ideal place to store them best is inside the oven. Before eating them, simply warm them in the oven. As with all types of bread, you can also freeze the mini focaccias and thaw them when needed.
