
Cauliflower Croquettes
.. it happened again. I boiled a whole cauliflower and since I'm the only one who eats it at home, almost all of it was left over. I don't feel like eating it boiled again, so? Let's make some tasty croquettes.
Ingredients
- Pre-boiled cauliflowerHalf
- All-purpose flour2/3 Tablespoons
- Rice flour
2Tablespoons2Tablespoons - Grated mild provolone cheese
1Tablespoon1Tablespoon - Extra virgin olive oilto taste
- Breadcrumbsto taste
- Spices to tasteto taste
Preparation

Simply mash the cauliflower with a fork, add the flour, salt, spices, and a generous drizzle of oil. Knead and finally incorporate the grated provolone.

Knead well with your hands until you get a soft but workable dough.
- STEP 3 OF 3
At this point, form the croquettes. I coated them in breadcrumbs and baked them in the oven at 200 degrees until golden brown.
