.. it happened again. I boiled a whole cauliflower and since I'm the only one who eats it at home, almost all of it was left over. I don't feel like eating it boiled again, so? Let's make some tasty croquettes.

  • Pre-boiled cauliflowerHalf
  • All-purpose flour2/3 Tablespoons
  • Rice flour2Tablespoons
  • Grated mild provolone cheese1Tablespoon
  • Extra virgin olive oilto taste
  • Breadcrumbsto taste
  • Spices to tasteto taste

Preparation

  1. STEP 1 OF 3

    Simply mash the cauliflower with a fork, add the flour, salt, spices, and a generous drizzle of oil. Knead and finally incorporate the grated provolone.

  2. STEP 2 OF 3

    Knead well with your hands until you get a soft but workable dough.

  3. STEP 3 OF 3

    At this point, form the croquettes. I coated them in breadcrumbs and baked them in the oven at 200 degrees until golden brown.
