These savory truffles would be perfect for your Christmas aperitif! They are colorful, fun, and delicious. Plus, they require no cooking. They can also be prepared the day before... the longer they stay in the fridge, the firmer and tastier they become.
I cooked the peas in a pan with a drizzle of oil and a pinch of salt. Then I transferred them to a bowl and mashed them coarsely with a fork.
I added the ricotta and gave it an initial mix. I seasoned with salt, pepper, and lemon zest. Finally, I added the chopped smoked salmon.
I mixed the ingredients well and placed the mixture in the fridge for about 15 minutes. After this time, I started forming balls with my hands.
I rolled the balls in pistachio crumbs and they were ready. Just place them on a serving plate and serve.
It is recommended to serve them after keeping them in the fridge for at least a couple of hours.
