
Whole Wheat Spaghetti with Leek and Cauliflower Cream
This main dish is made with just three simple ingredients, yet it will surprise you with its uniqueness and how good it is. It can be prepared in less than half an hour and allows you to enjoy a healthy yet enveloping and tasty main course. Moreover, it is entirely plant-based. Let's see how I prepared it!
Ingredients
- Boiled cauliflowerHalf of a cauliflower
- Curry powderTo taste
- Oil
3Tablespoons3Tablespoons - Whole wheat spaghetti pasta
200g200g - Leeks
1unit1unit - Finely chopped parsleyOne tablespoon

Preparation

I then stewed the sliced leek in a pan with a drizzle of oil and a splash of hot water. I added the cooked cauliflower and let them cook for a few minutes.
- STEP 2 OF 3
When the leek became nice and soft, I blended part of it. To the remaining cauliflower and leek, I added curry and sautéed them a bit.
- STEP 3 OF 3
I drained the pasta, combined it with the creamy sauce and the remaining pieces. I mixed it by adding pasta cooking water little by little until achieving the right creaminess. I plated and garnished with fresh parsley.

Ideally, it should be eaten while still steaming, but if you have leftovers, store them in the fridge and reheat the next day.
