Boil the seitan in the broth with the soy sauce for 20 minutes.
Dry it, let it cool, and cut it into thin slices.
Prepare the tonnato sauce by blending chickpeas, yogurt, cucumbers, and pickled capers, salt, oil, mustard, and lemon.
