Preparation

    The quantities are for about 50 cl of sauce

  2. STEP 2 OF 5

    Melt the butter in a saucepan, blend in the flour, stir and dilute with a little warm milk

  3. STEP 3 OF 5

    Season the sauce with a bit of nutmeg, salt, pepper, and continue stirring over moderate heat for about 15 minutes

  4. STEP 4 OF 5

    Remove from the heat and slowly incorporate, one at a time, the two beaten egg yolks, the Parmesan, the truffle puree (if you wish to use it), and the ham strips

  5. STEP 5 OF 5

    Return to the heat and continue stirring, let the sauce simmer for a few more minutes
