Preparation

  1. STEP 1 OF 6

    Wash the broccoli and divide them into florets. Blanch them for 3-4 minutes in slightly salted water, then drain well and cool under cold water to maintain the vibrant color.

  2. STEP 2 OF 6

    In a bowl, mix the extra virgin olive oil with the chopped garlic clove and chopped fresh rosemary. Season the broccoli with this emulsion, salt, and pepper.

  3. STEP 3 OF 6

    Place the broccoli in a lightly greased baking dish. Sprinkle half of the Shepherd's Pecorino Canestrato on top and add the milk by pouring it over the broccoli (for a creamier gratin).

    Mix the breadcrumbs with the remaining pecorino and a pinch of pepper. Sprinkle the mix over the broccoli to create an irresistible crust.
