Wash and trim the zucchini. Cut them into long, thin sticks.
In a bowl, mix breadcrumbs, grated Parmigiano Reggiano, turmeric, chopped parsley, salt, and pepper.
Dip the sticks first in flour, then in beaten eggs, and finally in the breadcrumb and cheese mixture.
Place the sticks on a baking sheet lined with parchment paper. Brush with a little oil. Bake in a preheated static oven at 200°C for 20 minutes (turn halfway through) until golden brown.
Serve immediately, accompanied by a red sauce or flavored yogurt.
