Cut the Pecorino Il Tenero into slices about 1.5 cm thick.
Heat a non-stick grill and grill the pecorino slices for 2-3 minutes on each side, until they are golden and soft.
Toast the bread on a grill or in the oven.
Place the arugula on the toasted bread slices and add the cherry tomatoes cut in half.
Lay the grilled pecorino slices on top of the arugula and finish with a drizzle of extra virgin olive oil and black pepper.
Serve immediately, garnishing each slice with a drizzle of honey for a gourmet version.
