
Langhe Bianco DOC. Vijé. Vinification is carried out in the traditional way, with manual harvesting of the grapes, then destemming and soft pressing, fermentation with selected yeasts at controlled temperature. One quarter in new acacia barriques for 7 months and three quarters in stainless steel for 7 months. The color is straw yellow. On the nose hints of gooseberry, acacia and apricot, a floral wine, with recognitions of lily of the valley, lemon blossoms, narcissus, gardenia, acacia flowers and lavender. Exotic hints, with notes of yellow peach, mango, pineapple and citrus peel to finish. On the palate it is warm, round, fresher than savory, but harmonious and very smooth. Recommended pairing with first courses with meat sauces, mushroom dishes, medium-aged cheeses and main courses based on poultry, rabbit and game. Recommended temperature: 14-16° C.
