Vinification is carried out in the traditional way, with manual harvesting of the grapes, then soft pressing followed by fermentation in stainless steel tanks at controlled temperature. Aging in stainless steel with weekly bâtonnage for 5 months. Then in bottle for 6-7 months. The color is straw yellow. On the nose floral and citrus notes. On the palate minerality and freshness. Recommended pairing with raw meat, cured meats, savory first courses, seafood recipes and preparations based on white meat. Recommended temperature: 10-12° C.
