

Cultivation: Champagne Viellard-Millot is a family business, now in its 6th generation, with its vineyards located near the village of Ambonnay. The properties cover 2.23 ha, consisting of 9 parcels, managed with rational viticulture practices and without the use of insecticides. The winemaking and sparkling process are carried out at the Centre Vinicole d’Ambonnay and all the cuvées produced are labeled with the Grand Cru designation, ensuring extraordinary quality thanks to patience and respect for tradition. In the cellar: manual harvest, pressing for 85% first-press juice (the cuvée) and 15% of the subsequent press (the taille); vinification and aging in steel, before bottling, for the base vintage (2016; 60%) and for most of the reserve wine (15 vintages “en réserve perpétuelle”, of which 10% is aged in barrel). Malolactic conversion completed and aging on the lees in bottle for at least 48 months. Disgorgement is done at least 6 months before marketing. Characteristics: yellow color with golden reflections, exhibiting toasted notes, biscuit, and pastry aromas, with hints of ripe grain. Chardonnay seems to dominate with its beautiful freshness. On the palate, it is rich and energetic, with a great correspondence to the aromatic traits.
