The estate extends over 2.23 ha, divided into 9 plots, managed according to reasoned viticulture practices and without the use of insecticides. Vinification and sparkling-wine production take place at the Centre Vinicole d'Ambonnay, and all the cuvées produced bear the Grand Cru designation, guaranteeing extraordinary quality through patience and respect for tradition. 2012 vintage: despite a difficult year, characterized by frost, rain, hail and water stress, a warm and dry summer allowed good ripeness. The low yield and quality of the grapes harvested gave this vintage an intense character. In the cellar: hand-harvesting, fermentation in temperature-controlled stainless steel, use of selected yeasts; malolactic conversion completed and aging on the lees for at least 7 years before disgorgement. Characteristics: golden yellow in color with yellow-green reflections and fine, lively bubbles; the nose immediately evokes peach, candied lemon and acacia honey, then gives way to notes of plum, apple, candied pear and cherry, with iodine nuances.
