Our wild boar sausage is made with wild boar and Tuscan pork meat (in a small percentage), minced, with salt and pepper. The process is the same as for all sausages. This wild boar sausage is slightly aged. It can be eaten raw or grilled. The flavor of the fine meat is immediately recognizable, both from the intense dark red color and the gamey aromas, which give it a rustic but balanced and unmistakable taste. Wild boar has become the main source of game meat in the Tuscan territory over the last two decades, after having almost disappeared.
