Description

Vinsanto Doc Toscano Vin Santo del Chianti by Ruffino is produced by drying Trebbiano and Malvasia grapes on racks in the evocative "vinsantaia" of Gretole. Vin santo is a typical dessert wine, perfectly paired with the "cantucci" biscuits from Prato. The grape clusters used for vin santo are slowly dried in the vinsantaia, selected, and vinified in early December. The pressing of the dried grapes was carried out with gentle and long cycles. The must obtained, dense due to the high concentration of sugars, was transferred to 225-liter oak barrels and fermented in a temperature-controlled environment at 18°C. When the right balance between alcohol and residual sugars was reached around mid-January, fermentation was stopped. After racking, the vin santo was transferred to oak barrels where it aged for about 3 years.
