From here, oxidation is started by a manual massage of the leaf by the tea master, who then keeps the leaves covered while they oxidise and brings them into contact with the air as little as possible, in order to boost GABA production in the leaves. Once the tea reaches the desired oxidation level (about 40%), the leaves are placed in a charcoal-heated oven, where enzyme activity is stopped. After this oven phase, the leaf is given its rolled shape either with a special machine or by hand, and once the tea is dried, it can be drunk. Preparation: We strongly recommend brewing this tea using the traditional Chinese method (gong fu cha) in order to fully enjoy these leaves. With this preparation, 5 grams of leaves (about 3 teaspoons) can be used in a 150 ml gaiwan to obtain several infusions with different flavours. After briefly rinsing the leaves in 90 °C water, you can start with a first infusion of 40 seconds. Then you can keep the water at the same temperature and increase the time by 10 seconds each time compared with the previous infusion (40 - 50 - 60 ...). This tea lasts for about 7 infusions. For a classic Western-style preparation, we recommend 3 grams of leaves (about 2 teaspoons) in a 200 ml cup with 90 °C water for a steeping time of 3 minutes.
