Mussels in white beer are a typical dish from Belgium, a small country rich in culinary traditions; its beers, often used in many dishes, are famous all over the world, as are the fries found on every street corner and said to be the best in the world.
Clean the mussels by removing the beard and discarding any broken ones. Rinse them under running water.
Slice the celery into 1/2 cm-thick pieces. Peel the lime, cut the zest into thin strips and squeeze it to obtain the juice.
Cut the onion in half and then into 2-3 mm slices. Melt the butter in a large pot and add the celery, lime zest and onion.
Let the vegetables wilt, then add the lime juice and beer. Cook for a few minutes.
Add the ground pepper and the mussels. Cook over high heat until the shellfish open completely.
Serve immediately with fries.
