In a bowl, mix the chickpea flour with the water, evo oil, and salt (if desired) until you obtain a smooth mixture.
Heat a non-stick pan and pour in a ladleful of batter, cooking the tortillas on both sides until golden brown.
For the filling, sauté the peppers and red onion in a pan with evo oil, salt, and half a glass of cooking water.
Cook first over high heat without a lid, then over medium heat with the lid on until the water has evaporated (about 15 minutes).
Season the avocado with paprika and lime juice.
Cut the fresh tomato into cubes and, if desired, add garlic.
Fill the tortillas with the mix of peppers and onion, cheese, seasoned avocado, and fresh tomato.
