In a bowl, mix the chickpea flour with water, extra virgin olive oil, and salt (if desired) until you get a smooth mixture.
Heat a non-stick pan and pour a ladle of the mixture, cooking the tortillas on both sides until golden brown.
For the filling, sauté the bell peppers and red onion in a pan with extra virgin olive oil, salt, and half a glass of cooking water.
Cook first on high heat without a lid, then on medium heat with a lid until the water has evaporated (about 15 minutes).
Season the avocado with paprika and lime juice.
Dice the fresh tomato and, if desired, add garlic.
Fill the tortillas with the bell pepper and onion mix, cheese, seasoned avocado, and fresh tomato.
